Realmente, alguns ficaram marcados pra sempre na minha mem&#243;ria, tipo a cozinha do Simplesmente Complicado e um dos meus filmes favoritos: O Pai da Noiva, que tem a casa mais incr&#237;vel e com cara de casa que eu sonhei em ter no auge dos meus 11 anos.</p><p>&#192;s vezes me perco no Pinterest, vendo cozinhas de casinhas no interior, com bancadas de madeira, ilhas no meio e tudo organizadinho. Ou ent&#227;o cozinhas em apartamentos em cidades enormes, cheias de inox, preto e m&#225;rmore. Amo todas, acho que cada uma tem uma beleza.</p><p>E tem a minha cozinha, que c&#225; pra n&#243;s precisa de muito mais aten&#231;&#227;o do que recebe. Quando alugamos a casa em que estamos, falei pro meu marido que precisava, era muito necess&#225;rio, que eu tivesse uma mesa com cadeiras na cozinha. N&#227;o sabia porque, n&#227;o entendia muito bem a necessidade, mas eu QUERIA.</p><p>Tenho minha mesa e depois de um tempo fui pensar o porqu&#234; dessa refer&#234;ncia, e &#233; claro, mesmo sem nenhuma psic&#243;loga me falando isso, era porque na casa dos meus pais sempre tinha uma mesa na cozinha. E l&#225; passamos muitos e muitos momentos.</p><p>A mesa da sala? Quase n&#227;o us&#225;vamos, tenho 0 apegos por ela. Mas a da cozinha&#8230; Foi ali que encontrava minha m&#227;e de manh&#227;, quando acordava para ir pra escola, o caf&#233; da manh&#227; na mesa e ela passando o caf&#233; preto perto da pia. Ali almo&#231;amos as comidas que meu pai fazia pra gente todos os dias, as inven&#231;&#245;es malucas e deliciosas que a Regina fazia, ali que sent&#225;vamos no meio da tarde pra acabar com a travessa de batatas fritas murchas que sobrou do almo&#231;o.</p><p>L&#225; que sentamos e comemos alcachofras com molhinho de azeite e sal, que comemos as panquecas de aliche que meu pai fazia, l&#225; que montamos lasanhas, pizzas, hamb&#250;rgueres de v&#225;rios andares e p&#227;es que minha m&#227;e fazia e sujava a mesa de m&#225;rmore inteira de farinha.</p><p>O cora&#231;&#227;o da casa &#233; a cozinha! &#192;s vezes a gente se perde em pacotes de ifood que s&#227;o abertos na sala e pra comer no sof&#225;, mas esse &#233; um lembrete pra vivermos mais pela cozinha, em fam&#237;lia, sozinhos, cozinhando, tentando receitas, rindo, conversando e comendo.</p><div><hr></div><h2>V&#237;deo da Semana | Padaria em Osaka</h2><p><em>por Regina Colon</em></p><p>Uma micro padaria em Osaka / Jap&#227;o, inteiramente comandada por uma padeira. H&#225; uns bons anos, por ali era apenas uma lanchonete comum paulistana e agora, para a minha surpresa e desconhecimento, funciona um bar e restaurante com climinha aconchegante e comidas deliciosas!</p><p>Pedimos um tartar que estava t&#227;o bem temperado que s&#243; foquei nele e fiquei tentando entender cada sabor que estava naquele prato. </p><div Apesar de ser simples, tem todo um trabalho pra fazer que &#224;s vezes n&#227;o tenho tempo.</p><p>Ent&#227;o antes da receita, vai a&#237; a indica&#231;&#227;o de pedir na <strong><a href="https://share.google/exnj6YDwvy6wLZOWr">Juventus</a></strong>, uma esfiharia cl&#225;ssica que faz charutinhos de repolho deliciosos.</p><p>Mas esse final de semana tive a oportunidade de acompanhar minha m&#227;e fazendo e tirei algumas fotos para voc&#234;s verem!</p><p><strong>Importante: </strong>n&#227;o teremos medidas nessa receita. Sim, eu sei que receita sem medida &#233; complicado, mas minha m&#227;e &#233; um esp&#237;rito livre e gosta de fazer tudo no olho, por isso, n&#227;o teremos. Mas d&#225; pra voc&#234; ter uma ideia:</p><ul><li><p><strong>Passo um</strong>: cozinhar os repolhos. Ela pegou dois repolhos enormes (mesmo, do tamanho da minha cabe&#231;a) e colocou eles em uma panela alta com &#225;gua fervendo. L&#225; ela deixou at&#233; as folhas amolecerem. Quando tirou de l&#225;, destacou folha por folha, e separou para elas esfriarem.</p></li><li><p><strong>Passo dois:</strong> Pegue carne mo&#237;da (ela usou uns 2kg de patinho mo&#237;do) e junte com arroz cru. Tempere a carne com cebola, um pouco de alho, pimenta do reino, sal e essas coisas b&#225;sicas.</p></li><li><p><strong>Passo tr&#234;s:</strong> pegue as folhas e fa&#231;a o charutinho. Coloque a carne pr&#243;ximo a uma das pontas, e enrole fechando bem as laterais.</p></li><li><p><strong>Passo quatro:</strong> Frite cebola e bacon picado em tamanho m&#233;dio. Ela frita no &#243;leo mesmo.</p></li><li><p><strong>Passo cinco:</strong> monte em uma panela funda: comece untando com &#243;leo, colocando v&#225;rios talos de repolho (aqueles que voc&#234; ferveu? as partes mais duras das folhas que quando voc&#234; montou o charutinho eram muito duras para enrolar). Depois dessa caminha de talos, vai colocando os charutinhos em ordem.</p></li><li><p>Entre uma camada e outra, voc&#234; vai colocando o bacon e a cebola frita.</p></li></ul><p>Cubra todos os charutinhos em &#225;gua quente salgada e coloque para ferver. Se chamava Tortappetit e foi uma fase incr&#237;vel da nossa vida, onde vivemos altos muito altos e baixos muito baixos, mas que parecem sair de um universo paralelo onde vivemos uma <em>side story</em> tipo em um jogo de video game.</p><p>Nessa &#233;poca, cozinhamos muito. Todos os dias, muito. Das 8h da manh&#227; at&#233; a hora em que os processos acabassem, est&#225;vamos l&#225; de uniforme, sapatinhos de cozinha ou t&#234;nis, touca e bandana na cabe&#231;a: picando, triturando, amassando, abrindo, assando, tran&#231;ando, caramelando ou a tarefa que fizemos tanto quanto cozinhar, lavando lou&#231;a.</p><p>Dizem que comida boa &#233; comida que faz com amor, e eu entendo de onde vem isso, mas eu acredito que comida boa vem de quem ama cozinhar. Melhor ainda quando &#233; uma pessoa que ama comer.</p><p>Dentro de uma cozinha voc&#234; tem pessoas cansadas, exaustas, doloridas, felizes, tristes, endividadas, preocupadas, dispostas, inspiradas, desesperadas e mais um monte de sentimentos. E mesmo assim, as comidas podem sair maravilhosas, pois temos cozinheiros que amam cozinhar. Que <em>apesar </em>das preocupa&#231;&#245;es, amam fritar, cozinhar, assar e sentir os cheiros e sabores quando voc&#234; termina um preparo.</p><p>Amar cozinhar &#233; um neg&#243;cio louco, desde que fechamos nossa cozinha n&#227;o cozinhei mais tanto. Nosso pai, que quase sempre cozinhava, inventou alguns pratos, pegou umas receitas aqui e ali e mandava muito bem, com card&#225;pio variado todo santo dia.</p><p>Hoje em dia, esses pratos s&#227;o os que a gente mais deseja num dia qualquer e fica tentando reproduzir no nosso dia a dia - mas nem sempre conseguimos a variedade de antes.</p><p>Abobrinha recheada com carne mo&#237;da feita no molho de tomate e comida junto com um arroz fresquinho.</p><p>Br&#243;colis refogadinho, bem temperado, com ovos por cima (poderia chamar de pochet, mas pra gente era s&#243; os ovos cuidadosamente estourados por cima).</p><p>A salsicha com molho vermelho e cebola, que a gente comia com arroz no almo&#231;o e no meio do p&#227;o na janta.</p><p>O picadinho de ex&#233;rcito (&#233; assim que meu pai chama at&#233; hoje), com carne mo&#237;da ou com carne em peda&#231;o, batatas, cenoura e muito tempero.</p><p>A batata (de verdade mesmo) cortada na faca e frita em &#243;leo bem quente. Era acompanhamento direto e a gente ficava comendo ela inteira depois que o almo&#231;o acabava, com a desculpa que depois murchava.</p><p>O hamb&#250;rguer feito na forma fulgor, com batatinha, cenoura, tomate e uns dentes inteiros de alho, que ficavam cozidos e macios, perfeitos para amassar e misturar na comida inteira dentro do prato.</p><p>A fritada de batata, outro acompanhamento coringa que sempre aparecia, mais quando a minha m&#227;e era a respons&#225;vel pelo almo&#231;o.</p><p>Aquele feij&#227;o bem temperadinho, gostoso mesmo, que at&#233; hoje a gente pede potinhos dele pra congelar - e que vira e mexe vira uma sopa de feij&#227;o perfeita (com macarr&#227;o espaguete junto, tradi&#231;&#227;o que surgiu na fam&#237;lia).</p><p>O arroz de forno com palmito, especialidade da minha m&#227;e, que fica bem molhadinho e acompanhado sempre de uma saladinha fresca.</p><p>A couve flor empanada e frita (arvorezinhas, para os mais chegados), que a gente quase nunca deixava sobrar pro almo&#231;o, por que ela era atacada logo ap&#243;s a fritura.</p><p>E o macarr&#227;o com molho vermelho, toda quinta feira. Toda quinta-feira gente. Sem falta. Toda quinta, macarr&#227;o com molho vermelho. &#192;s vezes com frango, outras com carne desfiada, mas a mais aguardada era a porpeta. Macarr&#227;o com porpeta de carne mo&#237;da do meu pai. Eu sempre gostei de comer ela purinha, tal qual um bolinho de carne. J&#225; usei ele em noites de ins&#244;nia pra me acalmar, um respiro num domingo de manh&#227; e tamb&#233;m pra apreciar essas cenas perfeitas.</p><p>Ele tem v&#237;deos de lasanha de num sei quantas horas, tiramis&#249; de outras tantas e todos s&#227;o incr&#237;veis, mas o de bolo de chocolate &#233; meu favorito.</p><p>Passa um caf&#233;, coloca os fones de ouvido e bom momento de paz &#128524;</p><p><strong>PS.</strong> j&#225; pede um <a href="https://www.instagram.com/p/CwnQUl1OWpb/">bolo de chocolate do MUG com calda extra</a> pra comer, pois voc&#234; vai querer um no final do v&#237;deo, vai por mim.</p><div><hr></div><h2>Onde ir? | R&#225;scal</h2><p><em>por Nath&#225;lia Colon</em></p><p>T&#225; a&#237; um assunto delicado pra mim: torta de ma&#231;&#227; <em>(quem me conhece, sabe rs)</em></p><p>Fui no R&#225;scal almo&#231;ar no buffet deles (&#233; de alt&#237;ssima qualidade, apesar do pre&#231;o um pouco acima da m&#233;dia) e um ponto alto, al&#233;m do salpic&#227;o de camar&#227;o (<em>s&#243; eu nunca tinha comido isso?</em>), foi com certeza a torta de ma&#231;&#227; deles.</p><p>Ela tem uma massa folhada deliciosa e dentro um recheio super saboroso. Usam a ma&#231;&#227; em peda&#231;os, como eu gosto (em alguns lugares fazem ela fatiada, n&#227;o acho que entrega a melhor textura) e o recheio tem uma calda doce com o gostinho na medida certa de canela. Temperei com sal, pimenta do reino e or&#233;gano. Eu estava sem chimichurri, sen&#227;o colocava tamb&#233;m!</p><p>Em uma frigideira mais funda coloquei &#243;leo e deixei ficar bem quente para colocar as porpetas, assim elas ficam bem fritas por Muitas vezes quando voc&#234; frita muito, ela passa e fica dura. Tem gente que aumenta o ovo, ou coloca p&#227;o ou mais mil jeitos, por&#233;m o que mais funcionou pra mim &#233; controlar a temperatura do &#243;leo e garantir que ela ainda est&#225; ao ponto por dentro.</p><p>E fica a dica: fazer elas aceboladas depois fica divino tamb&#233;m! Mas me peguei tendo dificuldade de come&#231;ar, talvez porque eu nem saiba muito bem como come&#231;ar algo que foi t&#227;o marcante pra mim!</p><p>A viagem veio sem aviso. Eu soube literalmente de um dia para o outro. Foi a trabalho e n&#227;o estava planejada. Em uma segunda qualquer, deitada no sof&#225;, recebo uma mensagem me chamando pra ir. Antes mesmo de me certificar se era uma boa escolha ou n&#227;o, eu j&#225; sabia que iria aceitar.</p><p>Foi demais ter feito o trajeto todo sozinha (foram mais de 24h de viagem!) e nunca fiz uma mala t&#227;o r&#225;pido.</p><p>Focando apenas na parte das comidas, que eram minha maior curiosidade e os momentos em que eu mais me interessava, tudo come&#231;ou j&#225; no avi&#227;o. </p><p>Fiz escala em Mil&#227;o, a ida at&#233; l&#225; comi um nhoque safado e bem padr&#227;o de avi&#227;o, normal.</p><p>Mas quando peguei o primeiro voo da Air China, meus amigos... Foi ali que eu olhava para os lados e pensava: eu t&#244; indo pra China totalmente sozinha e estou em um avi&#227;o experimentando minhas primeiras comidas da viagem.</p><div Teve esse arroz e essa carne com um molho que estava absolutamente incr&#237;vel. Picante, saboroso e com bastante gosto forte, o que me surpreendeu pois esperava que as comidas fossem mais neutras no paladar, n&#227;o sei porqu&#234;.</p><p>Aquele quadradinho &#233; doce, eu acho que tinha am&#234;ndoas mas n&#227;o consegui identificar. Bem bom.</p><p>Nesse mesmo voo comi mais uma vez e o sabor seguiu o padr&#227;o: gostoso e saboroso. Era um macarr&#227;o com shoyu, carnes e legumes. Tinha uma salada de batata, o p&#227;ozinho e dessa vez veio o Milk, que &#233; tipo um iogurte. Por pregui&#231;a, parei em um Starbucks. Pensei em n&#227;o ousar muito na escolha pra priorizar escolher um lugar pra eu descansar e colocar meus p&#233;s pra cima.</p><p>Pedi um enroladinho de salsicha que na primeira mordida dei risada: a Conversei com a Jane, falamos sobre a diferen&#231;a da China e do Brasil, da vida dela l&#225; e da minha vida aqui. Foi incr&#237;vel e ela me distraiu no &#250;ltimo voo em que eu n&#227;o aguentava mais.</p><p>Disse pra ela que as comidas do avi&#227;o foram incr&#237;veis e muito saborosas. Ela morreu de dar risada e disse que se eu gostei das comidas de avi&#227;o, que eu ia amar comer nas cidades! E ela estava muito certa.</p><p>A partir da&#237; eu comi muita, mas muita comida boa. Trabalhei todos os dias sem parar, mas sempre que par&#225;vamos pra comer era incr&#237;vel.</p><p>Comi as carnes mais macias, os doces mais equilibrados e os peixes mais suculentos de toda a minha vida. A textura do camar&#227;o e dos peixes que eu comi l&#225; s&#227;o completamente &#250;nicas, muito macios e &#250;midos, saboroso mas com sabor delicado. Tamb&#233;m tinha uma esta&#231;&#227;o s&#243; de saladas e frutas e a vontade que eu tinha era de passar o dia l&#225; comendo, mas era s&#243; o caf&#233; da manh&#227;.</p><p>Tamb&#233;m conheci caf&#233; da manh&#227; de um hotel de uma cidade no interior, fabril e mais vazia. L&#225; foi muito dif&#237;cil, pois al&#233;m de n&#227;o entender o que eram as coisas, tinham cabe&#231;as de peixes fritas (s&#243; a cabe&#231;a), p&#227;es fritos e lingui&#231;as e salsichas doces. Peguei um ovo cozido e segui o dia.</p><p>L&#225; fui muito bem recebida, cestas de frutas s&#227;o oferecidas quando chegamos em lugares, comi uvas enormes e doces, umas mini ma&#231;&#227;s que at&#233; agora n&#227;o sei o nome e bebi muito suco.</p><p>Tiveram duas refei&#231;&#245;es que mais me marcaram. A primeira s&#227;o essas fotos abaixo, onde comi camar&#245;es muito macios que provavelmente foram feitos no vapor. Comi muito bem e sempre tomando um ch&#225; quentinho, o que &#233; muito diferente da nossa cultura.</p><p>Teve o pombo tamb&#233;m, mas n&#227;o comi. av&#243;.</p><p>Dona Rosa era uma filha de imigrantes. Trabalhou na lavoura, em Santa Rita do Passa Quatro. J&#225; em S&#227;o Paulo, ajudou sua m&#227;e nas tarefas da casa. Na Mooca, trabalhou em f&#225;brica, em um grande pr&#233;dio na Avenida Paes de Barros. </p><p>Uma mulher forte que segurou muitas e muitas barras. Criou 8 filhos praticamente sozinha.</p><p>E era uma cozinheira de m&#227;o cheia. Daquelas av&#243;s bem de filme, sabe? Que estava na cozinha o tempo todo.</p><p>Sempre fazendo mais comida, sempre colocando mais um prato na mesa. Comendo depois que via todo mundo j&#225; satisfeito.</p><p>Tudo o que ela fazia era muito bom. Tudo.</p><p>E tinha um prato que ela fazia vez ou outra, mas que na minha vis&#227;o, era o prato mais caracter&#237;stico dela. </p><p>Sua origem Romena era o que sempre explicava a tradi&#231;&#227;o na fam&#237;lia.</p><p><em>Perorr&#233;, perogu&#233;, peror&#233;. </em></p><p>Uma massa aberta em formato de pastelzinho, recheada com pur&#234; de batata e cebola bem fritinha. Cozida na &#225;gua quente, igual nhoque. Finaliza com azeite ou manteiga e mais cebola bem fritinha.</p><p>Confesso que, quando nova, n&#227;o curtia muito, achava sem gra&#231;a. </p><p>Agora depois de alguns bons anos, comecei a ver o verdadeiro valor desses pasteizinhos.</p><p>Infelizmente, dona Rosa n&#227;o est&#225; mais por aqui para fazer pra gente, mas a receita e a tradi&#231;&#227;o passou para tios, tias e minha m&#227;e. </p><p>E agora, estou com vontade de comer mais uma vez.</p><p>S&#243; que refletindo sobre tudo isso, me veio a d&#250;vida.</p><p>Essa &#233; uma receita Romena? Acredita que n&#227;o? Fiquei em choque.</p><blockquote><p>O Peroh&#233; (tamb&#233;m encontrado como pirohi, pirogue, pyrohy, vareniki, dependendo da regi&#227;o) &#233; um tipo de massa recheada tradicional da culin&#225;ria eslava, especialmente da Ucr&#226;nia, Pol&#244;nia e R&#250;ssia.</p></blockquote><p>A liga&#231;&#227;o com a Rom&#234;nia existe, mas &#233; indireta e quase regional. </p><p>Em algumas partes da Rom&#234;nia, como Bucovina, houve uma influ&#234;ncia e intera&#231;&#227;o muito forte com exatamente Ucr&#226;nia, Pol&#244;nia e R&#250;ssia.</p><p>E adivinha qual regi&#227;o &#233; a origem dos pais da minha v&#243;? Bucovina. Parou!</p><p>T&#225;, <em>exagerei na bronca</em>, mas o principal truque para o bolo dar certo &#233; fazer com confian&#231;a e seguir a receita.</p><p>Vou expor minha irm&#227; Regina aqui <em>(ela l&#234; os textos antes de publicar ent&#227;o saiba que foi aprovado)</em>: minha irm&#227; tem a confian&#231;a, por&#233;m &#233; uma pessoa muito esp&#237;rito livre para seguir uma receita certinha.</p><p>A receita pede farinha, ela fala: e se eu colocar fub&#225;?</p><p>A receita pede manteiga, ela fala: t&#244; sem manteiga mas o &#243;leo faz a mesma coisa!!</p><p>A receita pede 4 ovos, ela fala: t&#225; mas e se eu colocar 3?</p><p>E ai realmente as coisas ficam um pouco dif&#237;ceis n&#233;? <strong>Vai desandar.</strong></p><p>Ent&#227;o tem que ter confian&#231;a <strong>E TAMB&#201;M</strong> seguir receita. Coloca os ingredientes certinho, faz os passos de forma b&#225;sica e sem nenhuma firula que vai dar certo:</p><p><strong>Separe os ingredientes:</strong></p><ul><li><p>3 cenouras m&#233;dias <em>(m&#233;dias!!! se for um cenour&#227;o, usa duas. muitos bolos de cenoura ficam encruados por ter muita cenoura, sabia?)</em></p></li><li><p>1/2 x&#237;cara de &#243;leo</p></li><li><p>4 ovos</p></li><li><p>3 x&#237;caras de a&#231;&#250;car</p></li><li><p>2 + 1/2 x&#237;caras de farinha de trigo</p></li><li><p>1 colher de sopa de fermento</p></li></ul><p>Pique as cenouras em cubos, coloque no liquidificador. Pegue os ovos, &#243;leo e a&#231;&#250;car e coloque no liquidificador tamb&#233;m. Bate at&#233; ficar l&#237;quido, n&#227;o precisa ficar l&#225; batendo por horas.</p><p>Despeja esse l&#237;quido na farinha, mistura <strong>BEM</strong> <em>(as vezes ficam uns gruminhos de farinha)</em> e por &#250;ltimo coloca o fermento.</p><p>N&#227;o precisa de <em>fouet</em>, n&#227;o precisa de nada. <strong>S&#243; uma colher e um sonho.</strong></p><p>Unte uma forma com manteiga e farinha, despeje a massa. Mais gostosos e saborosos que os de San Gin&#233;s, talvez porque eles eram servidos por ela e o cheiro que ocupava o ambiente era marcante e o momento inesquec&#237;vel at&#233; hoje.</p><p>Sou de origem espanhola, ent&#227;o imaginei que o churros deveria ter tamb&#233;m uma tradi&#231;&#227;o de l&#225;, fui pesquisar e vi que sim! Na verdade, em partes, ele &#233; meio que indefinido, pois Espanha diz que &#233; dela e Portugal diz que &#233; dele. </p><p>Segundo as pesquisas, quando os mouros tomaram a Pen&#237;nsula Ib&#233;rica, trouxeram a receita com eles. Outra teoria &#233; que os camponeses da Espanha estavam com dificuldade de ter ingredientes e fritar uma mistura de farinha com &#225;gua pareceu uma boa ideia. Portugal j&#225; diz que a receita veio de uma viagem explorat&#243;ria na China, pois existe um p&#227;ozinho frito Chin&#234;s chamado <em><a href="https://www.google.com/search?q=youtiao&amp;oq=youtiao&amp;gs_lcrp=EgZjaHJvbWUqEAgAEAAYgwEY4wIYsQMYgAQyEAgAEAAYgwEY4wIYsQMYgAQyDQgBEC4YgwEYsQMYgAQyBwgCEAAYgAQyBggDEAAYHjIGCAQQABgeMgYIBRAAGB4yBggGEAAYHjIGCAcQABgeMgYICBAAGB4yBggJEAAYHtIBCDEzNDhqMGoxqAIAsAIA&amp;sourceid=chrome&amp;ie=UTF-8">youtiao</a></em> que &#233; bem parecido. Realmente &#233; parecido, fui l&#225; ver <em>(n&#227;o na China, no Google)</em> e ele &#233; similar, faz sentido ter sido uma refer&#234;ncia.</p><p>De qualquer maneira, fui dar uma olhada em como as pessoas est&#227;o ensinando fazer churros hoje em dia e quase ca&#237; pra tr&#225;s. As receitas do TikTok n&#227;o tem nada a ver com o que minha av&#243; fazia. Longe de ser t&#227;o tradicionalista como meu pai, mas o que est&#227;o ensinando por a&#237; &#233; massa <em>choux</em> frita, e n&#227;o churros. Se voc&#234; abrir agora o TikTok e colocar churros, vai aparecer a receita cl&#225;ssica de <em>choux</em>: &#225;gua, manteiga, pitada de sal, farinha - cozinha bem, adicione os ovos. A diferen&#231;a &#233; que eles est&#227;o fritando a massa e n&#227;o assando.</p><p>Fiquei encucada e fui pesquisando a receita original e achei esse v&#237;deo de quem? </p><p>Exatamente: de um cozinheiro da Chocolater&#237;a San Gin&#233;s! op&#231;&#227;o muito boa de ir tomar um caf&#233;, comer uns doces e torradas (me recuso a chamar tudo de <em>toast</em>) deliciosas. </p><p>&#218;ltima vez que fui l&#225;, peguei um coado da casa e um <em>montadito</em>, que apesar de ter um valor alto para o tamanho da por&#231;&#227;o, tinha ingredientes de muito boa qualidade, o que super vale a pena. </p><p>De sobremesa pedi o torno de 2h.</p><p><strong>Ingredientes do bife &#224; rol&#234;:</strong></p><ul><li><p>4 bifes m&#233;dios de cox&#227;o-mole, finos, mas n&#227;o batidos e sem gordura</p></li><li><p>50g de um bom queijo parmes&#227;o em lascas (ou ralado)</p></li><li><p>uns 4 ramos de salsinha, sem o caule, s&#243; o raminho</p></li><li><p>8 fatias de bacon, bem fininhas</p></li><li><p>sal &#224; gosto</p></li><li><p>pimenta do reino &#224; gosto</p></li><li><p>alguns palitos de dente</p></li></ul><p><strong>Ingredientes do molho ao sugo:</strong></p><ul><li><p>5g de alho bem picadinho</p></li><li><p>alguns fios de azeite</p></li><li><p>300g de passata de tomate (aqueles de garrafinha, sabe?)</p></li><li><p>300g de tomate pelado (1 lata)</p></li><li><p>2 pitadas de pimenta do reino (dedo em pin&#231;a!)</p></li><li><p>sal &#224; gosto</p></li></ul><p><strong>Como fazer:</strong></p><p>Qualquer receita voc&#234; come&#231;a pelo que demanda mais tempo para ficar pronto, ent&#227;o, comece pelo molho ao sugo.</p><p>Em uma panela que acolha os bifes dentro do molho depois, regue com alguns fios de azeite, deixe esquentar levemente e coloque o alho picadinho. N&#227;o deixa fritar, queremos apenas que o alho comece a saborizar esse azeite. Assim que ele se acomodar na panela, coloque a passata de tomate. Em uma tigela separada, coloque o tomate pelado e esprema - com as m&#227;os mesmo - cada tomatinho. Queremos peda&#231;os, mas n&#227;o queremos ele inteiro. Junte na panela.</p><p>Tempere com sal, pitadas de pimenta do reino e mais alguns fios de azeite. Misture e deixe em fogo baixo, apurando tudo isso.</p><p>Vamos aos bifes! Em uma t&#225;bua, estenda o bife de comprido pra voc&#234;. Verifique se h&#225; gordura, nervos e algo mais que n&#227;o deveria estar ali. A ideia &#233; ele ser uma cama para o que vem dentro. Fa&#231;a quest&#227;o dessa cama ser macia. </p><p>Tempere o bife com um pouco de sal e pimenta do reino, passando a m&#227;o, massageando esse tempero, para que pegue mesmo em todo o bife. N&#227;o exagere, &#233; s&#243; um pouquinho mesmo.</p><p>Agora voc&#234; vai colocar 2 fatias do bacon, de forma que ele n&#227;o saia pra fora do bife e que pegue todo o comprimento.</p><p>No centro do bife, coloque um pouco de parmes&#227;o - garante que vai ter a mesma quantidade para cada bife, hein? Depois, um ramo de salsinha, com bastante folhinha.</p><p>D&#225; uma parada no bife e mexe um pouco o molho. Experimenta o sal e v&#234; se est&#225; quase no tanto que voc&#234; gosta. &#201; um ponto de sal antes do certo. </p><p>Agora, em uma outra panela, no fogo alto, coloque bastante &#225;gua para ferver, com umas 3 colheres de sal. &#201; aqui que voc&#234; vai cozinhar a sua massa escolhida, depois que a &#225;gua ferver. Pode ser espaguete, talharim, capelleti, parafuso&#8230; Como o seu cora&#231;&#227;o mandar.</p><p>Pronto, volta para o bife.</p><p>Vamos enrolar, bem apertadinho, de forma que nada que est&#225; dentro caia para fora. Prenda a emenda com o palito de dente e coloque mais um no meio, s&#243; por garantia. N&#227;o precisa encher de palito, s&#243; dois segura tranquilo.</p><p>Fa&#231;a a mesma coisa para todos os bifes.</p><p>Na panela do molho, d&#234; mais uma mexida. Coloque os bifes enrolados com muita delicadeza no molho. Mergulhe eles no molho ou fa&#231;a quest&#227;o que o molho envolva eles por inteiro. Deixe sem mexer por uns 5 minutos. Depois, vire os rolinhos, com a mesma delicadeza usada antes.</p><p>Provavelmente a &#225;gua da outra panela j&#225; ferveu. Coloque a sua massa l&#225; dentro, mexa e aguarde o tempo necess&#225;rio para ficar quase ao ponto, sem passar - n&#227;o queremos massa mole.</p><p>Verifique os bifes e se eles est&#227;o quase cozidos. Mexa um pouco o molho na panela, envolvendo os rolinhos.</p><p>Com a massa pronta, escorra quase toda a &#225;gua da panela, mas deixe um pouquinho ainda, bem pouco, mas que vai ajudar no resultado final. Deixe a massa nesta mesma panela. </p><p>Desligue o fogo do molho tamb&#233;m. Agora, com uma concha, pegue um pouco do molho (sem os bifes) e coloque na panela da massa. Misture tudo, sem deixar a massa seca, nem cheia de molho. Queremos apenas envolver tudo.</p><p>Vamos empratar isso?</p><p>Escolha um prato fundo. Coloque a massa nesse prato, na quantidade que a sua barriga pedir. Pegue um pouco mais de molho, regue a massa do seu prato e, por &#250;ltimo, coloque dois bifes &#224; role por cima.
